Aretha Franklin Holiday Meatloaf
6 pounds ground beef
3 cups cornflakes or Wheaties
2 eggs, lightly beaten
3/4 cup green olives with pimentos
2 cup green bell peppers, chopped
1 large onion, chopped
2 tablespoons garlic, minced
1 tablespoon Lawry’s season salt
1 1/2 tablespoons crushed red pepper flakes
2 cans tomato soup


Preheat oven to 350 degrees.

In a large bowl, combine the all of the ingredients, except the tomato soup and mix thoroughly with a large spoon, or your hands. Form into a loaf shape.

Place the meatloaf onto a large baking sheet and cover with aluminum foil. Bake for  40 minutes.

Remove meatloaf from oven and uncover loaf. Pour 2 cans of tomato soup over loaf. Return to oven and bake, uncovered, for an additional 20 to 25 minutes.
Garnish with green olives.

Let stand for 5 – 10 minutes before serving.
